What angle should I sharpen my knives at?Updated a month ago
The bevel angle for Japanese knives is at 15 degrees, some people do go down to 12 degrees, feel free to experiment and find out what works best for you.
Western knives are often sharpened at 20 degrees due to steel not being as hard, and therefore can't hold the edge.
